As its name implies, this is a lightly colored raw honey with a mild flavor profile. It is a fabulous honey for pairing with cheeses and fruit! Our North Carolina Wildflower Light Honey is typically harvested in spring, but may also be produced in late summer and early fall. It's completely dependent on the bees and what's in bloom.
When we harvest hives that are not dedicated to producing a specific varietal, we'll select lighter-colored honeycomb and process this separately from darker colored. Lightly colored honey is often more delicate tasting and makes a great addition to a hot beverage. Don't be mistaken, however – this 100% pure honey is still raw, packed with nutrients and pollen, and incredibly tasty!
Harvested: Typically spring, but as late as autumn Origin: North Carolina (Cherryville, Statesville, Fallston, Waco and Golden Valley) Primary Nectar Sources: Clover, Cotton, Canola, Goldenrod, Pear, Cherry, Apple, Honeysuckle Flavor Profile: Delicate, less sweet, very slight citrus finish Color: Golden (light) Pair with: Exceptional honey for cheeses. Great on appetizer fruits (grapes, berries, melon), oatmeal, pancakes, yogurt or a toasted English muffin. Complements hot beverages such as tea and coffee and is a great alternative to granulated sugar.
OUR HIVES ARE: Located on North Carolina farms and forested areas that are not treated with pesticides and provide an abundance of biodiverse, natural resources. We don't chemically treat our hives due to our sustainable beekeeping practices and the hardiness of the Russian honeybee.
