Our Spring Harvest honey is a unique combination of the season's first berry blooms (notably blackberry and strawberry) and local florals of North Carolina. Because of the proximity of our hives and the timing of when we harvest, this raw honey has a distinct fruity taste that differs from our Wildflower Honey. With a mild, delicate flavor, Spring Harvest pairs nicely with fruit and can be used equally-as-well in baking and cooking.
Harvested: April through May Origin: North Carolina (Cherryville, Statesville, Fallston and Waco) Primary Nectar Sources: Clover, Canola, Strawberry, Tulip Poplar, Honeysuckle, Cotton Flavor Profile: Mild and bright sweetness with hints of orange, berry and wildflower Color: Extra-light to light-medium amber Pair with: Figs, pears and fried bananas; excellent on buttered toast, scones and bagels
OUR HIVES ARE: Located on North Carolina farms and forested areas that are not treated with pesticides and provide an abundance of biodiverse, natural resources. We don't chemically treat our hives due to our sustainable beekeeping practices and the hardiness of the Russian honeybee.
